Pineapple lemon pickle salad...

Pineapple lemon pickle salad....


Ingredients:
1 small pineapple (skinned and cut into small cubes)
1 lemon ( for juice)
1 medium red onion (sliced)
2 bird eye chillies (sliced)
Coriander leaves
Salt


Directions:
1. Mix all ingredients into a bowl and mix well.

Cucumber lemon pickle salad

Cucumber lemon pickle salad...

Ingredients:
1/2 cucumber (cut in half lengthwise and slice thinly)
1 lemon (for juice)
2 bird eye chilies (sliced thinly)
1 red onion (sliced thinly)
1 stalk coriander leaf
Salt

Directions:

1. Throw all ingredients together. Squeeze lemon and season with salt.

Enjoy it along curries...

Green chili pickle... (chili jeruk)


Green chili pickle.... (Chili jeruk)


Here is a very simple pickle recipe. I love it with all my noodles.. It adds a kick to intensify the flavours.I always have a bottle of this in the fridge. So i can enjoy it anytime i stir up something. Store it in any old pasta sauce jars.. I love make them into spice jars.


Ingredients:
10-15 green chili (cut 1 cm lengthwise)
Hot water
2 tablespoons vinegar
1 teaspoon sugar
Pinch of salt
A glass jar

Directions:
1. Put all chili in the jar.
2. Pour the hot water till all chili are submerged.
3. Add in the vinegar, sugar and salt.
4. Close the lid tightly and shake well.
5. Cool it down and then store in fridge and use when needed.
6. Do not keep it for more than 6 months if possible.
That's also a reason why i make them in small jars so it finishes fast..
And i make a fresh one once it's done.

Achar


Achar...


Here is my favourite Ruchi achar in the world.. It's basiclly an indian pickle. There are many different types of achar. But this particular one Mango Avakkai Pickle or also Cut Mango has won hearts of not only mine but also my husband, family and my close friends....Simply amazing.. It's sour and spicy burst of flavours enhances and compliments other dishes really well.... It only cost $2 at any indian convenient stores.
