::Ribena::




As I was picking up fresh vegetables at the wet market.
I came across this alien looking fruit. I asked the lady
and she replied "Ribena" known as Roselle.
I was super thrilled and bought 50cent worth of Ribena fruit.
I grew up drinking this refreshing drink and till now to know I can make my own fresh Ribena juice. Oh my.. Raf loves it too...






10-15 Ribena fruit
A small handful of Rock sugar
1000 ml water


1. Wash fruit well and peel the
fruit's calyxes(the lobes)
and set it aside. That is what you will
be needing to make the juice.
2. Boil water, add in the calyxes
together with rock sugar.
3. You will see the colour from the
calyxes transferring to the water.
Cook till calyxes turns transparent.
4. Set aside to cool before
straining juice into a jug.
Refrigerate and serve chill.

::Mango Lassi::


Serves 4-6


Ingredients:

3 ripe honey mangoes
2 cup of fresh milk
400 grams natural yogurt
3 tablespoons honey


Directions:

1. Cut mango and by using a spoon gently remove flesh and cut into cubes. Place into food processor.
2. Add the milk, yogurt and honey together with the mangoes. Blend till mixture is smooth.
Serve chill. Greaaaat healthy drink on a hot day. :)

::Sweet sour fried sea bass::


Ingredients:

A:

1 medium sea bass (descaled and gutted)
2 tablespoons light soya sauce
Black pepper
Salt

B: Sauce

1 medium yellow onion (sliced)
2 clove garlic (sliced)
1 inch fresh young ginger
1 green chili (remove seed and thinly sliced into 2 inch lengthwise)
1/2 cup pineapple cubes
1 tomato (Sliced into quarters)
2 tablespoons Thai garlic chili sauce
2 tablespoon chili sauce
1 teaspoon sugar
1 tablespoon vinegar
1 teaspoon cornflour + little water
Salt & pepper
Fresh coriander (garnish)
Vegetable oil

Directions:

1. Make 2 deep slits on both sides of fish and pat dry. Marinate fish with soya and season well.
Set aside for flavour could absorb.
2. Heat up small pan for sauce. Drizzle oil and add the onions,garlic,ginger and tomatoes.
Saute for 1 min.
3. Add in the sauces, sugar ,vinegar, chili. Stir well on medium heat.
4. You can start deep frying the fish while doing the sauce. Heat up a wok with oil enough to deep fry fish.
5. Once oil is hot, slowly slide fish into oil. Fry till golden brown on both side.
Drain and pat dry once remove onto serving plate.
6. Lastly add the pineapples into sauce and season well. Simmer for 2 mins.
7. Pour sauce over fish, garnish with some coriander. Serve hot with steamed rice.

::Mango salsa::


Ingredients:

1 ripe mango (flesh finely chopped)

1 small cucumber (finely chopped)

1 red chilli (finely chopped, seeds removed
1 tablespoon fish sauce
1 tablespoon lemon juice

Direction:

Mix all ingredients well, set flavours set before serving...:)

Sundays Pancakes


::Sundays Pancakes::
(Makes 8)


Perfect sundays pancakes.. You can add blueberries, bananas, prunes which ever you prefer.
Here a basic simple no hassle recipe. Enjoy..


Ingredients:

4 eggs
115 grams plain flour
150 ml milk
1 teaspoon of baking powder
Pinch of salt

Directions:

1. Separate the egg whites and yolks in 2 bowls.
2. Sift the flour, baking power and salt into the yolks and add in the milk.
Mix well into a smooth thick batter..
3. Whisk the whites with salt with an electric mixer on high speed till form stiff peaks and fold into batter.
4. Make sure mixture is smooth. Heat a non stick pan and drop a small knob of butter.
Place a good amount of batter according to you preference of size.
5. You can add in your choice of fruit onto pancake before flipping it over.
6. Once sides are golden brown, transfer to plate.
7. Repeat the step till all batter is finish.
8. Enjoy it with your favourite maple syrup, honey, nutella or jam...

Summer spinach salad...


Summer fruit & spinach salad....
(Serves 2)



Ingredients:


100 grams baby spinach (washed and dried)
10-12 red seedless grapes (cut into halves)
1 orange (peeled)
6-8 baby yellow tomatoes (cut into halves)
20 grams pumkin seeds
Shaved parmesan


Dressing;
1 teaspoon sesame oil
Olive oil
Balsamic vinegar
Pinch of salt

Directions:

1. Place all ingredients into large salad bowl.
2. Peel orange slices over the salad so the juices will flow into the salad and act as a dressing.
3. Using your fingers peels each orange slice into three.
4. Drizzle sesame oil, olive oil, balsamic vinegar and the pinch of salt.
5. Toss the salad lightly and serve onto plate.
6. Top salad with the shaved parmesan.

Grilled cod & spinach fruit salad...


Grilled cod & spinach fruit salad....
(Serves 2)



Here is a simple light fruity dish.. I hope you enjoy it.



Ingredients:
Fish:
2 cod steaks
Salt
Black pepper
Olive oil

Salad:

100 grams baby spinach (washed and dried)
10 yellow baby tomatoes (cut into halves)
10 green seedless grapes (cut into halves)
1 orange (peeled)
A bunch of sliced almonds
1 teaspoon sesame oil
Olive oil
Balsamic vinegar
Salt
Directions:
1. Heat grill pan and season fish steaks well on both sides.
2. Place fish on the hot grill and cook for 2-3 Min's on each side.
3. For the salad throw all ingredients in a large salad bowl.
4. Peel the orange over the bowl so the juices flows into the salad. Using your fingers peel the each orange slices into three.
5. Check taste and season well.
6. Place half portion of the salad onto place and once fish steaks are ready place each steak over the salad.

Banana Fritters..


Banana Fritters....


There is so many types of bananas that you can choose from. "Emas", "Kepok" but my favourite is "Pisang Tanduk.." Horn banana. It normally come 9- 10 inches. You could easily get 10 slices from one piece. I love to shallow fry them and enjoy it with a cup of Tea on weekends while i play my Dominos on my patio. Here is how i love it done...
1 ripe horn banana
Batter:
4-5 tablespoons of rice flour
Pinch of salt
1 drop of yellow food colouring
(to enhance colour)
4 tablespoons water
Oil for shallow frying































Directions:
1. Cut 1 inch slices slantwise.
2. Prepare batter by adding rice flour,water salt and colouring in a bowl.
3. Heat oil in wok or frying pan.
4. Coat each slice evenly with the batter.
5. Gently glide the coated slices into oil once it's hot.
6. Fry till golden brown on both sides.
7. Drain well and serve.

Cempedak fritters....


Cempedak Fritters..

This is my favourite tea time snack. I am so in love with the taste of this fruit. It very similar to Jackfruit but a smaller version. It's sweet,fleshy and juicy pulps makes my mouth water every time i peel the skin and husk open. Note that it produce a very sticky gluey substance. So use a glove or just a plastic bag over your hands while handling it open. If you somehow manage to get the sticky substance on your skin, just use vegetable oil and rub it off. It such a jewel after all that hard work. I have crazy craving for it. I choose shallow frying compared to deep frying. I work just as well for me.

















Ingredients:

Batter
5 -7 tablespoons of rice flour
Pinch of salt
A drop of yellow colouring
1 cup water ( Add more if batter too thick)

1 small cempedak (consist of prox 20 small pulps)
Some cempedak might consist of larger size pulps
Vegetable oil for shallow frying.
Directions:
1. Make batter by mixing in the rice flour,salt and colouring in a large bowl.
2. Add in the water and mix till you get a smooth texture.
3. You could make the batter less thicker by add more water.
4. Heat oil in pan on medium heat.
5. Put in the pulps into batter bit by bit. Cover and coat the pulp fully in batter.
6. Drop in the pulps gently one by one.
7. Make sure the pulps are not too close to each other or it might stick together.
8. Fry till golden brown and switch sides.
9. Drain well on paper towels before serving.
Goes great with hoooot tea and watching televison.

Banana drops...

Banana drops...
(Makes 16)

Here is a local treat called "Jemput jemput pisang". I name my version banana drops..
I don't use too much baking powder or flour like most people do. So mine are soft and not spongy..
Just the way i like it. It normally eaten during breakfast or tea time.. Yum..
So as my mother in law requested, i hope you will like it.


Ingredients:
6 banana (8 small bananas)
8 tablespoons plain flour
2 teaspoons baking powder
1 tablespoon brown sugar

Directions:
1. Mash bananas in a bowl.
2. Add flour,baking powder and sugar and mix well.
3. Heat pan with oil for shallow frying.
4. Once oil is hot, drop spoon fulls of batter gently.
5. Fry till golden brown.
6. Drain onto paper towels to absorb excess oil.




Perfect with pipping hot tea....

Blueberry & Banana muffins...


Blueberry & banana muffins...

(Makes 8)


Simple, easy to do muffins over weekends.. Perfect for breakfast and tea time.


Ingredients:
2 ripe bananas
1 cup of fresh blueberries
1 large egg
3 tablespoon honey
3 tablespoon vegetable oil
2 cups of all purpose flour
2 teaspoon baking powder
3/4 cup milk
1 teaspoon ground cinnamon
8 large muffin cups
Pinch of salt


Directions:
1. Preheat oven to 200 deg.
2. Mash bananas in a bowl.
3. Shift the flour,baking soda, salt, cinnamon powder in a large bowl.
4. Throw in the mashed bananas and blueberries in the flour mixture.
5. Whisk eggs, milk, honey, oil together in a small bowl.
6. Pour in the liquid mixture into the flour mixture.
7. Stir gently till everything combines nicely together.
8. Put in the muffin cups into a 8 hole muffin tin.
9. Pour in the batter mixture equally into each cup.
10. Bake for 20 Min's.

Raf and i love how it is not dry...the banana give it a rich taste and moist texture.
