Stuffed ravioli with zucchini & onion

Serve 2-3

1 packet of stuff ravioli
(Trying Passion Pasta Goat Cheese & sundried tomatoes)
Half a zucchini (remove seeds and thinly sliced)
1 large white onion (finely chopped)
2 cloves garlic (finely chopped)
1 red chili ( deseed and thinly sliced
Olive oil
Salt
Black pepper




1. Boil pasta is boiling water and
drain when cooked and set aside.
2. Heat two tablespoons of oil in pan.
3. Brown the onion, garlic, chilies and zucchini and
stir till zucchini get slightly soft and transparent.
4. Throw in the pasta and season well.
Serve hot.

Agli Olio


Serves 2
150 grams spaghetti
2 cloves of garlic (finely chopped)
2 red chillies
(deseed and cut lengthwise then crosswise 1 cm wide)
1 tablespoon fresh coarse black pepper
Olive oil
Salt

1. Boil pasta in boiling water with
olive oil and salt till al dente
2. Heat oil in pan, brown the garlic together with chilies.
3. Stir in the pasta and season well with salt and pepper.
4. Cook for 2 minutes and serve hot.

::Beef ragu with penne::


Serve 2

A:
2 medium beef tenderloins steaks
Freshly ground black pepper
Salt

B:
3 medium onions (cut lengthwise then 1/4 inch crosswise)
5 cloves garlic (thinly sliced)
1/2 tablespoon dried thyme
2- 3 tablespoons dried oregano
1/2 teaspoon dried chili flakes
1/2 cup beef stock
2 small fresh tomatoes (cute into cubes)
1 can of tin tomatoes with juice
Olive oil

C:
2 cups of Penne


1. Preheat oven to 220 deg C.
2. Season steaks well on both sides and heat up
1 tablespoon of olive oil on a non stick pan.
3. Brown steaks for 1 mins each and set aside.
4. Heat up 4-5 tablespoons of olive
oil in a pot that could fit you oven.
5. Saute the onion and garlic.
6. Add in then rest of ingredients in B.
Simmer for 5-7 mins.
7. Lastly add in the steaks into the mixture.
Making sure it is covered evenly with the mixture.
8. Close pot with lid and bake in oven
for 2 1/2 hours till meat is soft and break easily.
9. Once done. Remove carefully from oven.
Toss in boiled penne into ragu sauce
and mix together and serve hot.
Top with shaved Parmesan cheese.

Wild Rocket Tagliatelle



Serves 2


Ingredients:


A handful of wild rockets

250g Tagliatelle (Pre boiled)

2 cloves garlic (chopped)

Shaved Parmesan cheese

Dried chili flakes

2-3 tablespoons Olive oil

Salt


Directions:


1. Heat up olive oil in a shallow pan and brown garlic

for 1 minute over medium heat.

2. Toss in the rockets and stir till slightly wilted.

3. Add in the pasta and a dash of dried chili

and combine and season very well.

Check if the pasta needs extra Olive oil.

4. Cook pasta for 1 minute and serve hot on plate.

Top with shaved Parmesan ans serve.

::Prawn & Garlic Tagliatelle::




Serves 4


250 grams of Tagliatelle pasta

8-10 medium glass prawns (deshelled and cut each prawn into 3 parts)

3 cloves of garlic

Dry chili flakes

Dried parsley

Olive oil

Salt

Water (boiling pasta)


Directions:


1. Boil water and salt into big pot.

Cook pasta for 7 minutes.

Drain and run it under cold water to

prevent pasta from sticking. Set aside.

2. Heat up a good amount of olive

oil in a large pan.
3. Throw in the garlic, prawns,

parsley and chili toss around till meat turn red.
4. Add the pasta and season very well with salt.

Mix well till combine for 2 minutes. Ready to serve.

::Chicken and macaroni soup::


Serves 2

Ingredients:

2 cups of pre boiled macaroni
6 chicken fillets (cut into small cubes)
1 medium onion (blended)
1 clove garlic (blended)
500-600 ml water
1 cube chicken stock
1 cup frozen mix vegetables
1 tablespoon light soya sauce
White pepper & salt
1 tablespoon vegetable oil

Directions:

1. Heat up oil in a small pot on medium heat.
Add the blended mixture and throw in the chicken stock cube. Saute for 5 mins.
2. Toss in the chicken cubes and stir till meat turns white.
3. Then add in the water and bring it to boil.
4. Season well and add the soya sauce, macaroni and frozen vegetables.
Simmer for another 10-15 mins.

Serve hot. Enjoy...

Gnocchi with butter and basil.

Gnocchi with butter and basil.
(Serves 2)


Here is very very easy recipe which i did when i was in Milan. So sick of eating out so i stir this up.
It's delicious.


Ingredients:

1 packet of gnocchi
2 tablespoon butter
1 clove garlic (finely chopped)
A sprig of fresh basil
Freshly grated Parmesan cheese
Salt
Olive oil

Directions:

1. Boil gnocchi in boiling water along with a good pinch of salt and a drizzle of olive oil for 3 Min's
till it starts to float. Drain and run with cold water so it doesn't stick and set aside.
2. Melt butter and throw in the garlic stir for 30 seconds.
3. Add in the gnocchi and basil toss gently for 1-2 min. Transfer to plate.
4. Sprinkle a good amount of Parmesan cheese and enjoy it hot.

Meatballs and Pasta


Meatballs and Pasta.

Ingredients:


A

250 grams of mince

2 cloves garlic (crushed)

1 teaspoon of dried parsley

1 tablespoon of grated Parmesan cheese

Pinch of chili flakes


Salt

Pepper

Oil for shallow frying.


B:
See pasta sauce recipe.

C:
200 grams of linguine
Olive oil
Salt

Directions:
1. Add all ingredients in A. Mix ans season well. Marinate in refrigerator for 30 Min's.
2. Make you pasta sauce B.
3. Boil ingredients C in boiling water together till pasta is cooked.
4. Make 11/2 inch meatballs and gently brown them in oil.
5. Once meatballs are browned drain oil and stir in gently into the pasta sauce.
6. The pasta should be ready and drained. Pour in the pasta together with the
meatballs and sauce and toss gently.
7. Top with grated parmesan and serve hot.

Lemon & cherry tomato spaghetti...

Lemon & cherry tomato spaghetti...
(Serves 4)

Ingredients:

A:
400 grams spaghetti
Salt
Water (for boiling)
Olive oil
B.
2 clove garlic (cut into half)
2 lemons (juice and zest)
1 cup parmesan cheese
8-10 yellow cherry tomatoes (cut into halves)
6 tablespoons olive oil
Fresh basil
Black pepper
Salt
Directions:

1. Boil spaghetti in a large pot with salt till al dente.
2. Drain and set aside.
3. Take a large serving bowl and rub the exposed side of the garlic all over bowl.
4. Squeeze juice of both lemons in the bowl, keep aside for zest later.
5. Add in the olive oil, and cheese and mix well.
6. Toss in the pasta,tomatoes,basil and season well.

Cheese ravioli & tomato sauce


Cheese ravioli & tomato sauce....
(Serves 2)


Ingredients:
1 packet Buitoni Light 3 cheese ravioli
Shaved parmesan

Pasta sauce:
2 cans Hunts whole tomatoes
1 can Hunts tomato sauce
1 large onion (diced)
2 clove garlic (diced)
1 teaspoon italian seasoning
1 stalk italian parsley
1 teaspoon sugar
Olive oil
Salt
Pepper


Direction:
1. Heat olive oil in a medium pot.
2. Throw in onions and garlic stir till transparent.
3. Add in the tomato sauce, whole tomatoes, italian parsley, italian seasoning, sugar.
4. Season well simmer on low heat for 1 hr 15 Min's till sauce turns thick.
5. Make sure you keep stirring so it wont burnt.

6. Once pasta sauce is done. Set it aside.
7. Fill half a large pot with water.
8. Bring it to boil. Add a pinch of salt and olive oil to prevent pasta from sticking.
9. Once water boiling carefully add in the pasta.
10. Cook for 9 Min's or tender. Drain
11. Heat the sauce again on medium heat, add in the pasta stir well for 3 to 5 Min's.
12. Top it up with some shaved parmesan cheese.


I love mine with generous sprinkles of crushed red pepper.. Smoookin...
