::Mee Suah with sliced fish & prawns::


Serves 2-3
1 packet of Mee Suah (Flour vermicelli)
5 slices of white fish
5 medium glass prawns
a small brocolli
a handful of different types of mushrooms
and leafy vegetable
2 cloves garlic (sliced)
1 medium onion (sliced)
Half cube of vegetable stock
1 stalk of spring onions(chopped)
Vegetable oil
1000 ml water
White pepper
Salt




1. Drizzle tablespoon of oil in a pot.
Brown the garlic and onion for a min
2. Pour in the water and cube stock bring it to boil.
3. Once boiling gently season well and add
the fish and prawns and cook for 5 mins.
Transfer the fish and prawns along onto a bowl and set side.
4. Add the remaining ingredients to the s
tock cook for a minute as the noodles
take a short time to cook and you
want to keep the vegetable slightly crunchy.
5. Scoop the equal portions into bowl and
add the prawn and fish to the bowl.
6. Lastly top with spring onions.
Serve hot

Mee Bakso





Serves 2-3


Ingredients:


1 packet of beefballs

250 grams of beef ribs

1-2 cube of beef stock

3 - 4 cloves garlic (crushed)

2 stalks of spring onions (chopped finely)

2 sticks of celery (chopped finely)

2 tablespoons of white pepper

3 tablespoons of fried shallot (soup & garnish)

4 stalks of bak choy (remove ends)

1 packet of egg noodles

1000 ml water

Salt

3 tablespoons vegetable oil


Additional:


Indonesian chili sauce

Sweet soya sauce



Directions:


1. Prepare beefballs by making a shallow cross on one side of each.

This is to make it fluff up nicely when it cooked.

2. Heat oil in a medium pot, brown garlic and beef

ribs together till brown.

Make sure you dont burnt the garlic.

3. Then add in the spring onions, celery and beef cubes.

Stir well till all ingredients turn soft and transparent.

4. Gently pour in the water and half of the

fried shallots then season well with salt and pepper.
Simmer for 30 mins.

5. Add in the beef balls, cook for 5-7 mins

till all floats. Set aside.

6. To cook noodles you can just boil in

water for 5 mins over high heat.

Drain and run with cold water and set aside.

7. Just before serving, heat up soup and

blanch bak choy in the beef ball soup for 1 min.

8. To serve place a portion off noodles in a bowl scoop soup and beefballs and garnish with bak choy, the remaining fried shallots and to add more flavour a teaspoon of chili sauce and soya sauce. Serve hot.

Fried beef bee hoon...

Fried beef bee hoon..
(Serves 4)
Ingredients:
4 -5 small bundles of dried bee hoon
250 grams stir fry beef
2 large onions
4 cloves garlic
3 eggs
3/4 tablespoon white pepper
2 tablespoons light soya sauce
1 tablespoon maggi seasoning
3 stalks of chye sim (cut lenghtwise)
Salt

Directions:
1. Blend onion,garlic and white pepper together with some water.
2. Heat oil in a big wok.
3. Cook and scramble the eggs and set aside.
4. Fry the blended mixture till fragrant for 15 -20 Min's.
5. Boil a pot of water to blanch the bee hon.
6. Add the beef and stir till meat is cook and season well
with salt,light soya sauce and maggi seasoning.
7. Once water is boiling add the dried bee hon and blanch for 1 minute.
Drain well and set aside.
8. Throw in the eggs and chye sim into the beef mixture and stir well .
9. Slowly add in the bee hon and stir gently.
Mixing it really well making sure all the bee hon is cover with mixture.
10. Cook for another 5- 7 Min's.


Serve hot and enjoy it with the green chili pickle...:)

Stir fried beef noodles.

Stir fried beef noodles..

(Serves 4)

Ingredients:

2 packets of hokkien noodles
1 packet stir fry beef
2 large onions (cuts into quarters)
4 cloves garlic
2 large tomatoes (cut into 8)
4 stalks of sawi
(you can use any leafy vegetable,

cut into 4 lengthwise)
2 eggs
2 tablespoon chili paste
3 tablespoons oyster sauce
4 tablespoons light soya sauce
1 tablespoon maggi seasoning
1 teaspoon garam masala
1/2 cup water
3/4cup oil
Salt

Directions:

1. Blend onions, garlic and

water together in a mixer.
2. Heat oil in wok, once oil is

hot add the puree mixture.
3. Add chili paste and stir till

fragrant for 15 to 20 Min's.
4. Boil water in a large pot 1/2 full.

Once water boiling, blanch noodles for 2 Min's.
5. Put in strainer and run it under

cold water for 30 seconds so it won't

stick together and set it aside.
6. Add beef, garam masala, maggi seasoning,

light soya sauce,oyster sauce salt and stir for

15 Min's till beef is almost cooked.
7. Add the eggs and stir well and throw in

the tomatoes and sawi.
8. Mix well till sawi is wilted.
9. Lastly add the noodles and stir slow and

evenly for last 10 Min's.

Serve hot....
